Coquito
Recipes vary, but here’s how we prepare the Puerto Rican version of eggnog, known as “Coquito,” for Christmas. Coffee and rum are featured prominently because, well, this is the caribbean:
3 Egg Yolks
1½ cups White Rum
¼ cup Gold Rum
½ cup Coffee Liquor
1 Espresso Shot
1 tbsp. Ground Cinnamon
12 oz. Sweet Coconut Milk
1 tbsp. Vanilla Extract
24 oz. Evaporated Milk
28 oz. Condensed Milk
How to do it:
Machine blend everything.
Bottle up and put in fridge.
Makes 88 ounces, about five of the bottles shown in the picture.
This specific recipe is light on alcohol for our taste, so we’re often very liberal with the amount of rum. Tastes great.
